Vegan French Toast , Inspired by Vegan Chef Isa Chandra.
So for this recipe I followed the American Weights Measurements, you can buy the cooking ‘cups’ from any good homeware store. I got mine from Sainsburys.
- Teaspoon of Coconut Oil
- Three slices of Day old French Bread, 2 inch Thick (day old so it soaks up the batter)
- 1 Ripe Banana
- 1 & 1/2 cups of Almond Milk
- 2 Tablespoons flaxseed
- 2 Teaspoons of Cinnamon
- 1 Teaspoon of good quality Vanilla Paste
- For Garnish I used Homemade Fruit Compote , Maple Syrup and Blueberries, you could use whipped coconut cream, or any sweet treat you fancy.
To make the batter, mash the banana with a fork and mix well with milk, flaxseed, cinnamon and vanilla paste. As the batter is a liquid there is no need to separately mix the flaxseed before hand as it is all going in together. Once the batter is well mixed, heat a griddle pan or frying pan on a high heat, place the teaspoon of coconut oil in the centre and allow to heat up further, dip your stale bread into the batter and coat both sides well – transfer the bread to the pan and cook on each side for around 3-4 minuets, or until the sides are browned and delicious. When cooked, its time to plate up! Arrange in the centre of the plate, adding garnish around the dish, fruits go well with french toast and dont forget a drizzle of Maple Syrup.
